This lovely chocolatey recipe comes from our Head Chef for C&E, Andy. A perfect way to use your left over chocolate from the Easter weekend. Or, if your like me and have none left, use chocolate you buy on your shop for necessities because: “you don’t know when your next leaving the house and may need chocolate to keep your spirits up”. Either way, happy baking!

Ingredients:

  • 250g butter
  • 200g chocolate
  • 50g cocoa powder
  • 75g plain flour
  • 5g baking powder
  • 350g sugar
  • 4 eggs
  • Optional Ingredient: A handful of nuts, chocolate chips, or pieces of chocolate bar

Method

  1. Pre-heat your oven to 120-130C and grease a pan at least 1″ deep.
  2. Melt your butter and your chocolate together
  3. Mix all of your dry ingredients together thoroughly in a large bowl.
  4. Pour in the melted mix of butter and chocolate and stir. At this point it may look weird but it will do until you add the eggs.
  5. Break the eggs into the bowl and combine all the ingredients.
  6. At this point you can add a handful of nuts, chocolate chips or bits of your favourite chocolate bar (for that extra indulgence)- just remember to fold them through gently.
  7. Pout the ingredients into the pre-greased baking tray.
  8. Cook at 120-130C for 35-45 mins. The closer to 45 mins you get the more of a cake like texture you will get.
  9. Take out the oven and leave to cool for a few minutes in the tin.
  10. Once slightly cooled move to a board and cut!
  11. Enjoy!
